Betty Carol Moore Ell, age 78, passed away Sunday, February 23, 2025 surrounded by her loving family.
Memorial Service: 2pm Wednesday, March 5th at Lake Shore Funeral Home.
She was born on a fall day in Bend, Oregon to loving parents, Tennie Imagene (Eakins) Moore and Joyce Guy (J.G.) Moore. As the family grew, Carol became the big sister to Neanie, John Boy, Thomas, Kelli, and baby brother Robin, where love and resilience were at the heart of everything. Carol was a graduate of Bend Senior High Class of 1964. Shortly after graduation, Carol married, and she was blessed with two children, Jolynn and Kylie. If she wasn’t working two jobs, then you could find her on the sidelines at all of Kylie’s games/sporting events -yelling and cheering him on. She was always his biggest fan. Professionally, she held several positions over the years at papermills, as a waitress, managed a plant nursery, but most noted was Wal-Mart in Waco and Chalk Bluff Water Supply Co.
Carol absolutely loved Mickey Mouse and was an avid collector, decorating her home to where her grandkids or any kid that came for a visit felt like they entered Disney World. She always lived life to the fullest doing it her way. She always dressed to the “T” – hair, nails, the cutest clothes along with shoes in the latest styles, while always wearing her favorite perfume, Georgio. On Fridays after work, she liked cold beer and listening to a good song on the radio – just hanging out and talking.
Throughout her life, Betty Carol held many titles, Mother, Auntie, Sissy, but none were as dear as “Meme”. She lived and breathed for her grandkids. Always making it her mission to keep them with the best clothes, shoes, electronics, toys, vacations…its endless! She gave boundless love, always providing warmth, a listening ear, wisdom, and unwavering support to those who were lucky enough to be a part of her life. The devotion to her grandchildren has left an incredible mark on them. She will be missed by so many.
Carol was preceded in death by her mama and daddy, Jean and J.G. Moore, and her daughter, Joyce Lynn (JoJo) Mathews; and special friend, Janice Ell.
Carol is survived by her son and daughter-in-law, Kylie and Jennifer Arnold of China Spring, TX; grandchildren, Kylie Erin Dunn and husband, Opie of Kentucky, Senior Airman Kourtney Carlson of Nebraska, and Kashius Arnold of China Spring; great grandchildren, Nevaeh, Trinity, and Kayce; siblings, Joy Jean and Larry Rose of Oregon, John and Dayna Moore of Washington, Thomas and Deni Moore of Oregon, Robert and Kelli Hines of Oregon, and Robin and Tonya Moore of Oregon; and a host of nieces and nephews.
On behalf of the family, we would like to extend our heartfelt gratitude, especially to the fourth-floor staff and the rehab department at St. Catherines, for the love and care you have shown to Carol. Your kindness and compassion have meant the world to us.
We would like to express our deepest appreciation to the Apostolic Tabernacle of China Spring for your unwavering prayers and the love you have shown us during these difficult times. Your thoughtfulness and support have been a great comfort for us, and we truly love every single one of you.

Beautifully written and a wonderful tribute to a very strong and inspirational woman. I met Miss Carol in 1992 and she was always very welcoming and kind. She has a way of making you a member of the family. Thank you Miss Carol, you are an amazing woman and a role model for all
Carol was always ready to go on the River every weekend. We even did a couple of night cruises. I will always remember our family and yours on the river and having a good time. She was always there anytime I needed to talk. Carol was an amazing neighbor and friend in Kentucky. Love you Carol! Fly High!!
Miss Carol, was a sweet lady she watched my kids when they were young. She did love Mickey Mouse. All throughout her house was Mickey Mouse everywhere. She will be missed by all those that knew her!!!!
